Succulent Salmon and Farro
When it comes to fish, sometimes there is nothing better than a perfectly flakey, tender piece of rich and flavorful salmon. This succulent salmon recipe, adapted from The Diabetes Six O'Clock Scramble Meal Planner by Aviva Goldfarb, is astonishingly easy to pull together. The salmon is baked on a bed of lemon and sautéed onions. The end result is tender, juicy, and perfectly seasoned salmon. The farro is the perfect companion for the luscious salmon – it’s slightly nutty and just the right amount of chewy.
