Risotto with Shrimp and Peas
This shrimp and pea risotto is as easy to whip up as it is delicious. The risotto is creamy and tender and the peas add a pop of color and sweetness with each bite. Cooking the shrimp directly in the risotto enhances the subtle shellfish flavor and cuts down on clean up. Finishing the risotto with Parmesan cheese adds a salty tang and the fresh basil brightens the dish.
