Not only is this a popular Arabic dish, but it also happens to be a classic vegetarian recipe since it is the perfect staple. In fact, it is one of the first recipes I mastered when I changed to a plant-based diet several years ago. My mother- in-law Miri makes this simple dish even tastier by adding her incredible garnish that infuses the basic rice and lentils with intensely warm flavor. Served with a simple, traditional dish of caprese, this combination is hearty in texture but zesty and light in flavor. You can throw this salad together in minutes and enjoy as a light snack in the afternoon or before dinner.
