This hearty vegetarian one bowl meal starts with soba noodles—soft, supple Japanese noodles made from buckwheat flour. When cooking soba, keep a close eye on the pot. Once the noodles are added and the water is brought back to a boil, be sure to add cold water to prevent the pot from boiling over. Meanwhile, roast tofu and carrots side-by-side in the oven to develop a golden crust. Finally, top everything with a luscious sauce made from miso, tahini and lemon.
