This Greek salad is packed with fresh vegetables and is perfect for lunch or a busy weeknight. First, you’ll whisk together finely chopped garlic, red wine vinegar, dried oregano, salt, pepper and olive oil—this is your salad dressing. Combine diced cucumber, shallots, tomatoes, Kalamata olives with chopped romaine lettuce and set aside while you sauté chicken breasts and slice them into thin strips.
