How did pot stickers come about? Supposedly, they started out as boiled dumplings that a chef forgot about in a wok. The water boiled away and the dumplings stuck to the pan. He pried them from the wok and served them, much to the delight of his guests who loved the contrast between succulent filling, crisp bottoms and chewy-tender wrappers. The modern cooking method that you’re doing mimics the chef’s delicious accident.
