This dish was really reverse engineered through the accouterments. I love Thai- style Salads with lots of herbs and roasted nuts, like your classic Thai Peanut Chicken Salad. I wanted to find a way to put my own unique spin on this concept so I started working with tuna as the main protein. I am always experimenting with dry rubs, since they are a great way to inject flavor into proteins and create texture. When cooked on a grill, this smoky rub marries with the heavily charred flavor of the tuna and pairs beautifully with the sweet, citrus notes of the salad.
