The Mom

Amy is our resident working mom. With two boys ages 11 and 8, she’s got her hands full juggling work, soccer practice, guitar lessons, and more. The last thing she needs is for dinnertime to be complicated, so Chef’d is a perfect solution for her. Amy’s also super fit and healthy and she’s always looking to serve her family delicious food that’s nutritious and wholesome as well.

Here are her recommendations:

“My kids like the Mongolian Beef. That’s the one they always ask for! The sauce is super flavorful and it’s a fun dish to make – they like helping with that one. We shake the beef in a bag with the cornstarch.”

“We make tacos in our house every Tuesday. It’s nice to make something that’s a little more on the healthy side – something that is still familiar to them but puts a new twist on a family favorite.”

“My family loves Pad Thai and this is a great option for us since it’s more healthy than takeout. You get those great different flavors without unnecessary calories and oil, and it comes together really quickly.”

“This meal is super fast to create, perfect for me to get dinner on the table for hungry kids. For our family we separate out the different elements and let everyone select what they want. It’s also nice because I can prepare the egg to fit everyone’s taste. And I like that this is an approachable way to introduce my kids to farro, which is a grain they don’t normally eat.”

“My oldest just asked for the baked fish and chips again. The kids love the fact that it’s made with corn flakes – it has a great crunch and a little bit of a sweeter flavor. And I love that the potatoes are baked versus fried.”

“I made the carne asada when my husband was out of town so I was manning the grill as well as doing everything else. I’d never made Mexican rice before and it was super simple and the kids loved it. And guacamole is always a house favorite.”

I love these blogs to learn about various meals and to hear if they are healthy or easy to prepare. Some of the foreign foods are unfamiliar so I love the descriptions and can select which I want to cook in the future.
